清炒雞米做法

  1、澱粉(10克)放碗内加水調出濕澱粉(20克)備用;蔥、姜切末待用;将雞脯肉剔去筋膜,切成0.4厘米見方的肉末放入碗内,加蛋清、黃酒、精鹽、味精、濕澱粉拌勻,腌漬入味。

  2、冬筍、荸荠、菠菜梗均切成0.4厘米的丁,放入開水中焯過,撈出控淨水分;将黃酒、精鹽、味精、濕澱粉放入碗内,調成芡汁;炒鍋内放入熟豬油,置中火上燒至五成熱時,将雞肉末放入油中滑出備用。

  3、鍋内留油50克,用旺火燒熱後,放入蔥、姜末,烹入香味後,迅速放入雞肉末及配料,倒入芡汁颠翻,淋雞油出鍋即成。
