豬腿肉炖雞肉

  1、主料:雞1200克,豬腿肉200克,

  2、輔料:小麥面粉100克,豬排骨(大排)200克,

  3、調料:大蔥6克,姜5克,料酒25克,鹽15克,雞油15克,味精5克,香油5克,

  4、将嫩雞投入沸水鍋中氽一下,撈出洗淨;

  5、蔥3克切末、蔥3克切段、姜切塊;

  6、豬腿肉剁成末,放入精鹽、料酒、味精和清水,攪拌至有黏性,再加入蔥末和香油拌成餡料;

  7、将面粉和面成面團,與餡料一起包成鳥形水餃,煮熟備用;

  8、取鍋一個,用竹箅子墊底,放上蔥段、姜塊、排骨(腿骨),加入清水(2500毫升),置于旺火上燒沸;

  9、放入嫩雞和料酒再燒沸;

  10、用小火炖于嫩雞酥熟,揀出姜塊、蔥段、腿骨不用;

  11、取出竹箅子,撇淨浮沫;

  12、加入精鹽和味精,将餃子放入鍋,圍在雞的周圍,再将鍋置于旺火上燒沸,淋上熟雞油即可。
