麻肉的制作方法和配方

  1、材料:豬腿肉150克,黑、白芝麻各25克,雞蛋1個,料酒、鹽、胡椒粉、辣醬油、幹澱粉、植物油各适量。

  2、先将芝麻炒熟。豬肉切成大薄片置碗内,加雞蛋、料酒、鹽、辣醬油、胡椒粉拌勻後,再放幹澱粉,調成糊狀待用。将熟芝麻攤在大盤裡,鍋内油燒至微見青煙時,将拌上厚糊的肉片,逐片兩面蘸上芝麻,放入熱油裡兩面炸1分鐘左右即撈出裝盤。
