  1、首先将鮮蝦摘去除蝦線,清洗切條,用食鹽、米酒、生姜水、雞蛋清、芡粉退漿預留;

  2、莼菜擇洗幹淨, 生雞蛋磕入碗内攪拌後倒進熱鍋中内煎出陰囊後切條; 香青菜葉摘洗幹淨預留;

  3、坐鍋打火引入大骨湯,沸後放進莼菜、食鹽、生抽醬油、白胡椒粉、味精調料,再放入蛋皮絲、蝦絲,劃後勾薄芡,淋入芝麻油,裝點香青菜葉就可以。
