生煎包的做法和配方

  1、小麥面粉500克,酵母菌少量,肉餡200克,蔥适當,生姜粉少量,黑芝麻粉适當。

  2、小麥面粉中添加酵母菌,涼水搓成面粉發酵成二倍大;

  3、肉餡中添加蔥段,鹽,生抽醬油,生姜粉,白胡椒粉,糖,米酒,芝麻油和蔥姜水後攪拌上力;

  4、攪發醇好的面糊揉勻靜放10分鐘,将面糊分為小劑擀成圓皮後包入包餡揉成小包子;

  5、炒鍋中抹上油,放進鍋中靜放10分鐘,撒上黑芝麻粉,煎2分鐘後澆上少量涼水;

  6、蓋上焖至水幹,随後撒上蔥段,澆上芝麻油,再焖2分鐘就可以。
