  1、将鴨子從胸脯處劈開,加入精鹽、花椒、蔥、姜、味精、料酒、淹制4天,每天翻一翻用手搓一搓。

  2、然後将淹好的鴨子用竹棍從肚子撐到胸腔,挂陰涼通風處風幹。

  3、把風幹好的鴨子放在壇子内,加入白酒,蓋嚴壇蓋,放12小時後,裝盤上籠屜蒸40分鐘,切塊裝盤即成。
