酸辣白菜是最普通的家常菜,做法也很多,我最喜歡的還是用白菜幫來做,先把白菜洗幹淨,把白菜葉子和白菜幫分開切,白菜幫用斜刀削成薄片,切點配料,蔥姜切成絲,把幹辣椒切圈,大蒜切成末備用,再調點料汁碗中加入生抽醬油,加入一小勺鹽,一小勺白糖,少量胡椒粉,一小勺雞精,一勺耗油,一勺香醋,一勺澱粉攪拌均勻,鍋中加入花生油燒熱,加入蔥姜蒜辣椒段花椒爆香,再加入白菜幫炒至白菜幫變軟倒入料汁大火翻炒均勻收收湯汁就好了,一盤酸辣脆爽開胃下飯的白菜幫就做好了。
