蝦洗淨,去須,背部開刀去蝦線。

鍋内下色拉油,燒至六七成熱時,将蝦下入,炸約1分鐘,炸至外焦裡嫩時撈出。

另起鍋加色拉油燒至四成熱,下蒜子炸透,下入香辣油、泡椒,翻炒幾秒後放入炸好的蝦,加鹽、味精、白糖、雞粉、花生碎、芝麻調味,翻炒均勻,裝盤、撒香蔥即可。
