菜黃炒明蝦

主 料: 明蝦一斤五兩。

配 料: 韭菜黃四兩,濕香菇五錢,白肉三錢,味精、香油、魚露、胡椒、紹酒、雪粉各少許。

将明蝦去掉殼和頭、留尾巴洗淨,片畔(注意不要片斷),除去蝦腸,再洗淨撈起,瀝去水分,用濕澱粉摸過,用熱鼎熱朥(約七、八成火候),炸熟後撈起。

另将香菇切片,菜黃切段,白肉切片,下鼎炒後,速把炸好的蝦肉一起投正是再炒,并用味精、香油、魚露、胡椒、紹酒、用雪粉水勾糊,下鼎速炒幾翻,裝上盤即成。
