豆腐和雞血切成小條;

海米用沸水泡發好;

菠菜擇洗幹淨,切成3厘米長的段,用沸水燙後,放入冷水漂涼,撈出擠幹;

鍋放在火上,加入鮮湯,放入雞絲、雞血、豆腐、精鹽,燒沸撇去浮沫;

再放入菠菜,用濕澱粉勾芡,把雞蛋打開甩入湯;

加入醋、胡椒粉、味精、香油即成。
