鳝魚炒芹菜

将胡椒、花椒炒焦,研成細粉;

芹菜斜切絲,焯熟備用;

姜、蔥、蒜切絲;

将鳝魚切成4厘米長的斜絲;

鍋置旺火上放入植物油加熱後,放入鳝魚絲,翻炒至半熟時加入料酒、豆瓣醬、姜絲、蔥絲,再翻炒幾下;

放入醬油、白糖、肉湯,然後改微火煨之,待汁将盡時,加入醋翻炒;

最後放入焯熟的芹菜絲,炒勻後盛在碗裡,撒上胡椒粉、花椒粉即成。
