酸木瓜炒雞

将雞清洗幹淨,剁成2厘米見方的塊,入碗,磕入蛋清和濕澱粉(20克),拌勻捏透。

酸木瓜去皮,切成小片。蔥、幹辣椒切成小節。姜切成小片。

炒鍋上中火,熱時注入豬油,燒至二成熱時,下雞塊、木瓜片炒透倒入漏勺中。鍋内留少許油,下辣椒炸黃,下蔥姜炒香,倒入雞和木瓜片,簸鍋數下,下鹽、味精、胡椒面、白糖、料酒炒拌入味,用濕澱粉(10克)勾芡,颠翻幾下,淋上芝麻油,出鍋裝盤。
