肘子要想味足色亮,一是要用老湯。關于老湯我在以前的食譜中提到過多次,就是上次的炖湯留到這回接着用,這次的炖完留着下回用,以此循環,越煮顔色越重,味道越濃。當然喽,每次還要繼續加新調料和水才更夠味兒。想要肘子皮亮有光澤,放一把冰糖又提亮又增鮮。整個肘子端上桌很大氣,趁熱扒開,香糯糯一搶而光;涼後切片蘸汁味道更佳,而且不膩。
