  1、先将蛏幹用冷水浸泡10小時,水中加少許堿。加堿後浸泡的時候縮短而且蛏幹變得更大,吃起來更有韌性,有嚼勁,口感較好;

  2、蛏幹泡好後,去除内髒及外圍髒東西,然後清洗幹淨,瀝幹水備用;

  3、鍋中放油,然後放入辣椒爆香,注意用小火,油溫不要太高否則辣椒容易燒焦;

  4、辣椒爆香後放入蛏幹爆炒,用中火更不容易燒焦;

  5、蛏幹炒熟後放鹽、雞精、生抽調味即可。
