  1、北方酸菜做法:白菜洗淨晾幹處理好後用開水燙一下,而後晾涼放入容器中壓緊實,第二天注入清水,密封好,溫度5-10度的環境下腌制30天就可以。

  2、南方酸菜做法:芥菜清洗幹淨,晾曬至葉子變軟,用食用鹽揉搓均勻後放入幹淨的容器中,倒入淘米水,密封腌制10天即可。
