  1、将雞肉切成一厘米見方的雞丁,加鹽、料酒、姜片、大蔥段、白胡椒粉、花椒抓勻,腌15分鐘後放入芡粉、蛋清抓勻。

  2、在油鍋裡放入姜片、大蔥段、花椒、雞丁,用低溫炸三分鐘,撈出瀝幹,挑出大蔥,再用高溫快速炸一分鐘,微微金黃後撈出。

  3、另起油鍋,放姜片、蒜片、花椒、辣椒、豆瓣醬、雞丁、調味料翻炒三分鐘左右,淋入辣子油,放入大蔥段翻炒幾下出鍋,撒少許熟芝麻即可出鍋。
