  青菜燙或煮着食要比炒着食健康,如果青菜足夠新鮮,而且無污染,涼拌生食或做蔬菜色拉是最能保住營養的,一大早洗完并切過的菜晾到中午甚至晚上才炒的做法也不妥當,因為被切過的菜跟空氣的接觸更充分,不但葉酸,其他維生素也容易因氧化而大量損失。
