  1、神仙豆腐不凝固就加草木灰水使其凝固。

  2、制作神仙豆腐時,先将新鮮神仙樹葉去葉柄洗淨瀝幹倒入桶内,再倒入開水,水量約為葉子的5倍,用木棒将葉子搗碎攪成糊狀,将糊狀樹葉倒入豆腐布中,用手擠壓出汁液,反複幾次到樹葉無法流出漿汁為止。等濾後汁液的溫度降至30℃左右,加入備好的草木灰水,邊加邊用手攪動,待攪均後放在陰涼處冷卻凝固。2小時後,一盆綠若翡翠、細軟柔嫩、狀如凝脂的墨綠色神仙豆腐完成。
