  1、涮鍋的菜:凍豆腐切片;西葫切片;大白菜切塊即可。

  2、涮鍋子主要是涮羊肉。羊肉過去講究用内蒙古集甯産的小尾綿羊,還得是羯羊(閹割過的公羊),據說這種羊沒有膻味。一隻羊身上能涮的隻有上腦、小三岔、大三岔、磨裆、黃瓜條五個部位,約十五斤肉,都是肉質細嫩,瘦中帶肥的。片羊肉是有講究的,傳統的片法是手工切片,講究薄如紙、勻若漿、齊似線、美如花。如今,片肉多是将肉先凍上再用機器切片,半斤肉能片出六寸長、一寸半寬的肉片四十到五十片,這種肉片一燙即熟。
