扁肉餡怎麼做才會嫩

  1、做扁肉餡要選擇前腿肉,或者好的五花肉。選好肉以後,把肉手工剁碎,不要剁成肉泥。

  2、肉剁好以後,放碗裡,然後放入鹽、一個雞蛋、一勺澱粉。再放一勺生抽、一勺耗油。再加上小蔥一起攪拌均勻,加點雞精或者味精。

  3、拌勻以後加小半碗水,用筷子順時針攪拌,直到攪拌上勁,扁肉餡就做好了。
