  1、食材:雞全腿6隻,雞錘同雞腿切開,洗淨,青蔥4條,去白,切段,蒜蓉2湯匙,姜片3塊左右,略拍。

  2、汁料:份量僅供參考,青蔥3條,去白,切粒,食用油3湯匙,燒開,鹽2茶匙,姜片2粒左右,磨蓉。

  3、雞腿先分開錘和雞上腿,用鹽搽勻再沖洗,然後再用鹽去腌15分鐘,盤底先鋪上姜片,再鋪上雞塊,再鋪青蔥。

  4、水一開,放入鍋中隔水蒸至全熟(約35分鐘左右) ,晾涼或放入保鮮袋再放入冰水急凍。

  5、先去骨,有有皮地方先斬先塊,雞皮上塗上麻油,其餘地方則用手撕成雞塊裝盤,再鋪剛才切好的連皮雞塊于面上即成,汁料混合作醬汁用。
