  1、首先用刀子把雞腸割開,把裡面的髒東西翻出來,用水沖洗幹淨。

  2、接着用食鹽搓洗,去掉雞腸裡的滑滑的粘液;然後又用水澱粉來搓洗,也是為了去掉粘液。

  3、最後用料酒浸一會再用清水沖洗幹淨後,燒滾水,把雞腸放進滾燙的熱水中燙熟,過冷水,然後瀝淨水,放冰箱裡面,随炒随取。經過這樣處理的雞腸子是非常幹淨的,一點臭味都沒有。
