  1、首先,選粗鹽;煮鹽水,根據你的蛋量決定開水的份量,放鹽是直到飽和為止(鹽不再溶于水中)即行;待鹽水涼後放雞蛋,然後浸腌十五天,不必翻動蛋。

  2、将鴨蛋洗幹淨晾幹水分。放入白酒中裹一下。然後裹上一層鹽。用保鮮膜将鴨蛋逐個包好。将包好的鴨蛋放入保鮮袋,腌15-25天。将腌制好的鴨蛋放入鍋中煮8分鐘就可以吃了。
