  1、将鴨血切成條塊,入沸水氽煮後撈出;黃豆芽切去須根,火腿腸切成大片,豬肉(肥瘦各半)切成片,莴筍頭切成條,黃花抽去雌蕊,幹辣椒切節。

  2、火鍋底料用水化開,放入鍋内燒沸熬味,下精鹽、味精,放入血旺、鳝片、火腿腸、肉片、黃豆芽、水發木耳、大蔥及各種蔬菜共煮。等黃豆芽斷生後起鍋轉入盆内。

  3、炒鍋置旺火上,倒混合油燒至六成熱,放入辣椒節炸呈棕紅色,下花椒炸香,淋在盆内上桌。
