  1、原料:雞雜(雞腸、雞心、雞肝等),料酒,色拉油,泡姜片、蔥節、泡椒節、野山椒、小青紅椒節,鮮湯,精鹽,胡椒粉,白糖,雞精。

  2、将雞雜(雞腸、雞心、雞肝等)治淨後分别改刀,放入加有料酒的沸水鍋中氽一水,撈出。

  3、炒鍋置火上,放入色拉油燒熱,投入泡姜片、蔥節、泡椒節、野山椒、小青紅椒節炝香,下入雞雜略炒,烹入料酒,摻入少許鮮湯,調入精鹽、胡椒粉、白糖、雞精、味精,炒至汁水将幹且雞雜成熟時,起鍋裝入生鐵鍋内,即可上桌。
