  1、原料白青筍(或洋鶴菜)1000克,15%食鹽溶液2500克,香料鹽水3000克,白酒20克,醪糟汁20克,香料包1個,白糖50克。

  2、将白青筍去莖,去皮,洗淨,瀝幹水分,切成1厘米厚的片,浸泡在食鹽溶液中1.5個小時。

  3、将白青筍片、香料包裝入壇中,用竹片卡緊,倒入鹽水和其他作料,蓋上壇蓋,摻足壇沿水,泡1小時即成。
