  1、雞蛋洗幹淨後破殼後加入鹽1小勺和少許橄榄油,攪打均勻,最好用蛋抽子,會較容易;

  2、在蛋液中慢慢注入牛奶,繼續攪打均勻;

  3、用細篩網将蛋液慢慢過濾兩遍,濾去泡沫,将蛋液慢慢倒入炖盅中。沒有篩網可以将蛋液靜止放置一段時間,沒有炖盅的可以倒入碗内,上覆保鮮膜,再用牙簽略紮幾個小眼;

  4、碗中加入水燒開後,放入炖盅,注意水要到炖盅深度的一半就好,蓋上蓋子,隔水炖5分鐘即可。
