  1、材料:活殺黃鳝2條(去骨去頭尾淨重300克)、生抽1大匙、涼拌醋3大匙、白糖4大匙、料酒1大匙、幹澱粉5大匙。

  2、黃鳝讓賣主宰殺剖成鳝背;

  3、去除内髒洗淨鳝背的血污,切成約2公分寬的鳝片;

  4、片裡加入1大匙料酒和4大匙幹澱粉,用手抓勻;

  5、熱過後加入油,燒至約6成熱時,分次下鳝片炸至表面酥脆撈出濾油;

  6、倒出鍋裡多餘的油,倒入1碗清水,加入生抽1大匙、涼拌醋1匙、白糖4大匙燒開;

  7、用少許清水将1大匙幹澱粉溶開,慢慢倒入鍋裡攪勻;

  8、再加入剩餘的2大匙醋調勻,倒入炸好的鳝片拌勻即可。
