老北京炸醬面怎麼做好吃

  1、原料:手擀面或挂面、五花肉、各種配菜、油、料酒、蔥末、姜末、白糖、黃醬、香油。

  2、把肉切成黃豆粒大小的丁。

  3、油熱放肉,變色後放蔥、姜,炒出香味放醬下鍋。下鍋時最好放點溫水,但隻須加一次水。

  4、小火慢炒,有了香味時放點白糖,醬變成紅黑色時,放蔥末,加香油,料酒,翻炒均勻後馬上起鍋。

  5、醬炸好後和配菜、面一起拌勻即可。
