敞鍋煮皮,蓋鍋煮餡。敞開鍋煮,水溫隻能接近100攝氏度,由于水的沸騰作用,餃子不停地轉動,皮熟後,再蓋鍋煮,溫度上升,餡易煮透。大約10~15分鐘左右,餃子飄上來了就熟了,最好在飄上來之後再放點涼水,再開鍋撈出即可。
