  1、泡過水的米不宜保存,因為潮濕的緣故,可以将泡過水的米放置在陰涼通風處,攤開晾幹吹透。米泡過水最好直接下鍋烹饪,不要久放,以免發黴。

  2、米泡水都是在烹饪之前,為的是提升米飯的口感。煮飯的時候,水從外向裡傳遞,同時熱量也從外向裡傳遞。澱粉顆粒吸水之後膨脹變大并舒展開來,在高溫下發生“糊化”變成膠,米飯也就“熟”了。
