  1、把排骨斬成小塊,洗淨瀝幹水分;藕削去外皮,用刀拍破後适當切塊,放入清水中浸泡待用。

  2、炒鍋上火,将油燒至五成熱,将肉塊逐一投入鍋内炸至肉熟定型撈起。重新将鍋内 油燒至七成熱,将肉塊放入鍋内再炸一次,待肉塊皮酥呈金黃色時,撈出濾幹油待用。

  3、炒鍋再上火,加适量油燒熱,放入蔥姜末、蒜泥炒香,加酒、白糖、醬油、 水、雞粉燒沸,用水澱粉勾芡,倒入裡脊塊翻勻,淋上香油、醋即可起鍋裝盤。
