冬瓜鮮菇燴滑蝦

  1、主料:冬瓜1斤(640克),鮮冬菇5隻,清雞湯1罐,蝦仁4兩(160克),蛋3隻。配料:腌料:鹽半茶匙,麻油及胡椒粉各适量,生粉1茶匙。

  2、芡汁:水2湯匙,生粉2茶匙,胡椒粉及鹽各适量。

  3、冬瓜去皮及瓤,沖淨後切粗粒;鮮冬菇沖淨切粒;蛋攪勻。

  4、蝦仁去腸,沖淨抹幹,拌入腌料待5分鐘。

  5、清雞湯煮滾,加冬瓜煮至軟;再加鮮冬菇及蝦仁煮熟。

  6、埋薄芡及拌入蛋成滑蛋,上碟即成。
