  因為半熟的豆芽中有胰蛋白酶抑制劑,有損健康,恐會引起惡心。炒豆芽菜時隻圖脆嫩而炒得半生不熟,食後會使人發生頭暈、嘔吐、腹痛、腹瀉等中毒症狀。 生豆芽内含有皂素等毒害物質,經過高熱才能失去其毒性。另外,生豆芽内還有一種蠟樣芽孢杆菌,此為有害菌,高熱才能将其殺滅。所以,炒豆芽要充分加熱炒熟,這樣吃了才安全。
