  當然是直鍊澱粉啦!

  直鍊澱粉又叫糖澱粉,是由幾十至上百個葡萄糖分子殘基組成的一條直鍊,在熱水中可以溶解,比較好消化,一般像面粉,米飯之類的直鍊澱粉多些;

  支鍊澱粉又叫膠澱粉,分子相對較大,是由幾千個葡萄糖殘基組成的,是有許多分支再分支的樹冠狀結構,較難溶于水,不好消化,一般像黃米,糯米等含的支鍊澱粉多些。
