  1、香菇提前泡開,剁好雞肉。雞肉拿水焯一下,放姜片跟蔥,香菇洗淨,瀝水。鍋中放少許油,焯好的雞肉撈出,放鍋中稍稍煸炒下,出香味即可。倒入砂鍋,放兩片姜,放清水,蓋上蓋子,開火炖煮。

  2、煮開之後,繼續10分鐘,然後放香菇炖煮,煮開,轉中火炖30分鐘。放少許白糖(一點點就好,提味,雞湯會更加鮮。)放鹽調味,嘗好鹹淡,加少許料酒。繼續炖煮,到自己喜歡雞肉的熟爛程度即可。
