  1、原料:鴨脖、蔥姜蒜、幹紅辣椒、麻椒、花椒、小茴香、八角、香葉、桂皮、草果、丁香、白芷、冰糖、老鹵。鴨脖洗淨,去掉表面的筋膜;

  2、提前焯一下水,去除血水和雜質,撈出沖洗幹淨,瀝幹水分;

  3、蔥切段姜切片,各種香料沖洗幹淨,晾一下水分;

  4、起油鍋,爆香所有的香料;

  5、加醬油、老抽和料酒,添加适量水和老鹵,加冰糖,煮開;

  6、添加鴨脖煮開,添加适量鹽調味,轉中火炖煮30分鐘;

  7、關火,充分浸泡;

  8、吃之前,撈出瀝幹,鋪在烤盤内,200度,上下火烤20分鐘左右即可;
