生粉通常是指玉米澱粉、土豆澱粉,質地細膩,顔色潔白有光澤感,但是吸水能力差,隻能用來烹饪;澱粉定義十分廣泛,包括綠豆澱粉、甘薯澱粉、小麥澱粉等,質地相比之下較為粗糙,吸水能力較高,可以用來熬湯。
