  1、較小的蝦米在清洗時,可用剪刀将頭的前部剪去,擠出胃中的殘留物,将蝦煮至半熟,剝去甲殼,此時蝦的背肌很容易翻起,可把直腸去掉,再加工成各種菜肴。

  2、較大的蝦,可在清洗時用刀沿背部切開,直接把直腸取出洗淨,再加工成菜。按這種方法清洗烹食,既衛生,又不失蝦的鮮美味道。
