  1、面粉中邊加水邊攪拌,直到成雪花狀。用手揉勻成餃子面團,蓋濕布饧15分鐘再次揉勻

  2、茄子去皮擦成絲,用1茶匙的鹽拌勻腌制5分鐘,用手擠去去多餘的水分,蔥姜切末

  3、豬肉餡中放入1茶匙的鹽、老抽、白糖一點點、胡椒粉、料酒、和餃子餡調料、蔥姜末順着一個方向攪打上勁,茄絲放入肉餡中,加入香油, 攪拌均勻成餃子餡。

  4、面團在案闆上搓成條,分割成劑子。把面劑子按扁,擀成餃子皮

  5、取一張餃子皮,中間放入餡料

  6、左手做一個小碗狀、右手捏餃子邊,包成月牙形的餃子
