  1、五香通常指烹調食物所用茴香、花椒、八角、桂皮、丁香等五種主要香料,即芒香類調味品,具有把有腥味、臊味、膻味的食品變得無異味進而使食品清香撲鼻的功能。

  2、食物的氣味刺激人們的嗅覺,香者增強食欲,臭者減退食欲。雖然也有像臭豆腐那樣的食品,聞聞臭,吃吃香,但總以氣香味美為佳。
