  1、用料:老鴨1隻、山藥4小節、生姜1塊、小蔥3-4根、鹽适量、胡椒粉少許、料酒。

  2、将斬件老鴨洗淨瀝水備用;生姜分做兩份,刀背拍松,小蔥洗淨挽成兩個蔥結備用;大鍋坐水加熱,放入生姜1份蔥結1個,大火煮沸後淋入料酒小勺,下鴨塊氽燙至血腥浮沫泛起撈出沖洗幹淨,瀝幹水備用;

  3、将山藥洗淨刮去外皮,切滾刀塊狀,清水浸泡備用;

  4、将氽水後的鴨塊放入湯煲中,一次性加入足量清水,湯煲内投入生姜1份蔥結1個,中大火煮開,将湯滾後泛起的浮沫再次撇清;

  5、去皮山藥控幹水分投入湯煲内,再次滾開鍋後,轉小火煲至山藥軟糯鴨塊肉可用筷頭戳透(約2個鐘),調入精鹽,少許胡椒粉即可熄火。
