清湯酸菜魚的做法

  1、魚洗淨,斜刀片下魚肉、魚骨,加鹽、料酒、姜片去腥調味,加雞蛋清使魚肉更滑嫩,腌制20分鐘。

  2、酸菜入鍋翻炒直到出香味後盛出備用。

  3、黑魚魚頭、魚骨入鍋煎透,表面略有焦黃色時加入酸菜、少量青紅椒,翻炒片刻,加涼水。

  4、魚湯沸騰後,魚肉下鍋,不加鍋蓋,煮3-5分鐘。

  5、加雞精調味,出鍋加青紅椒點綴即可。
