  1、北京烤鴨1隻,使皮膚光滑緊繃。

  2、将鴨片、在将鐵鈎斜穿頸上,從肛門處放出,用高粱杆支撐于脊骨和胸脯三岔骨之間,烤至上色成熟時出爐。灌入八成滿的開水、用開水澆燙皮。

  3、甜面醬、鴨舌把空氣充入皮下,卷入鴨餅即可。

  4、用糖水淋鴨身,燙皮桂色将鴨體用饴糖沸水澆燙,從上至下澆燙3-4次,然後用糖水澆淋鴨身,一般糖水由饴糖與水按1:6-7比例配制。

  5、由刀口處灌水,鴨入挂爐。将鴨子吹幹。
