  1、選則新鮮蓮藕洗淨、去皮、切片。

  2、鍋中燒開水,放入蓮藕焯至熟透撈出,過涼水。

  3、兌汁:碗中放鹽、糖、味精、用少許開水将其溶化,再加入醋、姜絲、幹辣椒絲調勻。

  4、胡蘿蔔切絲。

  5、香菜切段,取香菜梗。

  6、将兌好的汁,澆在藕片上拌勻,腌漬30分鐘即可食用。加一些胡蘿蔔絲、香菜梗點綴。
