   山藥洗淨去皮,切滾刀塊,用沸水燙後撈出。

   放入五成熱的油鍋中,炸熟至金黃色撈出。

   炒鍋内放油燒至四成熱(約100℃),用小火放入白糖溶化。

   炒至金黃色起泡時,迅速倒入山藥,翻勻糖液。

   盛入抹芝麻油的盤中,灑上芝麻,上菜時外帶一碗涼開水用筷子蘸水吃。
