河南農村扣肉的做法

  做法如下:

  食材:

  主料:帶皮豬五花肉,梅幹菜;

  輔料:醬油,清油,南乳,白糖,生抽,米酒,八角粉,鹽;

  步驟:

  1、燒開水,将帶皮五花肉放進去煮至用筷子能插入,取出。用叉子在肉皮表面上紮小眼,紮得越密越好,這樣炸出來的皮才會蓬松,趁熱在肉皮表面上抹醬油;

  2、鍋裡放油,燒到七八成熱(油面上的青煙向四面擴散,油面平靜),把整塊肉的皮朝下放入鍋中炸,把肉皮炸黃撈出瀝幹油;

  3、把整塊肉肉皮朝下放入水中浸泡,泡到表皮軟軟
