  1、先将老雞洗淨,加15碗水煲3小時成上湯,海草用水浸洗幹淨,除去根和沙石,再以上湯煨軟海草,調味後上碟。

  2、将蟹洗淨,蒸15分鐘至熟,放凍水浸15分鐘,取出蟹肉和蟹膏,用刀背将蟹膏壓碎。

  3、把蟹肉及蟹膏加水及生粉煮成芡汁,起鍋前将蛋白倒入攪勻,收火後與海草同上碟即成。蘑菇片伴碟。
