臘羊肉如何做

  1、準備材料:羊肉(瘦)5000g,醬油100g,白砂糖100g,丁香3g,黃酒50g,花椒8g,鹽150g。

  2、羊肉洗淨切成長30厘米、寬5厘米的長條。

  3、食鹽放入鍋内炒幹,再研成碎末,和花椒混拌,撒在羊肉條上,搓揉均勻,置于缸中腌制2天,再加醬油、紹興酒、白糖腌制7天,中間翻倒2次,使之腌透。

  4、風幹:腌好的羊肉條,出缸,挂在竹架上,晾幹,臘羊肉就做好了。食用時将臘羊肉刷洗幹淨,煮蒸皆可,但火不宜過大,肉熟即好。
