  1、将牛雜(腸、肚、心、肺)分别洗淨,并放入沸水鍋氽去異味,撈出晾涼,再用刀切成片;

  2、香菜洗淨,切成1厘米長的段;

  3、豆瓣醬用刀剁成蓉;

  4、姜洗淨,切成粒大小;

  5、炒鍋置火上,放植物油燒至四成熱時,下豆瓣醬蓉、姜末、花椒炒香,加鮮牛骨頭湯,放入牛雜和所有調味料燒開,倒在沙鍋内加蓋炖熟,放雞精調味,再撒上香菜段即成。
